DiscoverU is open to students ages 13-18 and who have an interest in one of the program tracks - Education, Field toTable (Agriculture and Culinary), or Health Professions. See below for specific information regarding each of the program tracks.
Tuition: $429, Early Bird rate of $379 if registered by April 1 ($50 discount will be applied at checkout during registration)
Scholarships: A limited number of partial scholarships are available. Contact Amy Scheers, SCC Director of Community Education for more information.

Ready to explore the dynamic worlds of agriculture and culinary arts? Join us for the DiscoveU Field to Table Summer Program, where you'll immerse yourself in hands-on learning experiences that bridge the gap between farm and kitchen. In this exciting program, you'll explore career opportunities in both fields, harvest fresh crops from a Freight Farm, test soil, and delve into animal and livestock science, as well as discover the importance of ecology and managing invasive species. You will also learn the culinary secrets of seasonal ingredients, cultural dishes, diverse cooking techniques, and make some wonderful desserts. Whether you're passionate about sustainable farming or creating mouth-watering dishes, this program will cultivate your skills and passion for the future of food.
Calling all future healthcare heroes! Join our one-week summer immersion program designed for students aged 13-18 who are passionate about and eager to explore healthcare professions. Under the guidance of expert Occupational Therapy, Health Occupations, and Nursing faculty, you'll gain hands-on experience in critical skills like emergency first aid, CPR, vital sign measurement, medication understanding, sensory and accessibility assessments, and patient assessment techniques. This dynamic program offers a unique opportunity to dive deep into medical knowledge, develop practical skills, and get a comprehensive preview of healthcare career pathways - all while having an engaging and educational summer experience.
2025 DiscoverU Faculty
Beth Bauer is SCC's Nursing Academic Program Coordinator. She has been a nurse since 2004, holds a Master's in Nursing and certifications in professional development and simulation education. Her background with direct patient care has been critical care and cardiology. She has experience as a bedside inpatient nurse, outpatient nurse, staff development nurse educator, and academic educator. Her passions in nursing education are around transition times for nurses - entering the nursing program, graduating from the nursing program, and entering the nursing workforce.
Dr. Sarah Spaethe, OTD, OTR/L. Sarah is a dedicated occupational therapist with 26 years of experience across diverse practice areas, including mental health, skilled nursing facilities (SNF), long-term care (LTC), home health, community-based practice, hospital rehabilitation, and pediatrics. She earned her Bachelor’s degree in Occupational Therapy from Saint Louis University and later obtained her Doctorate in Occupational Therapy from South University in 2016.
Sarah’s academic career began in 2013 at Brown Mackie College, where she served
as a full-time faculty member and Academic Fieldwork Coordinator, overseeing 50% of the OTA curriculum. She later became an adjunct faculty member at Maryville University before transitioning to a full-time faculty role at St. Charles Community College in 2017.
Passionate about occupational therapy, Sarah finds deep fulfillment in helping individuals achieve independence and improved quality of life. While she initially never anticipated a career in academia, teaching has become an unexpected source of joy and professional fulfillment.
Outside of her career, Sarah is a devoted wife and mother of two teenage daughters.
Arje Crawfor is SCC’s Health Occupations Academic Program Coordinator. She graduated from St. Louis University’s Accelerated Nursing Program in 2006, where she earned her Bachelor’s Degree in Nursing, as well as a certification in forensic science. She has worked directly with patient care in the areas of labor and delivery, adult neurology, and pediatrics. Her favorite thing about nursing, and healthcare in general, is the schedule flexibility it offers, as well as the privilege it provides to care for someone at often their most vulnerable moment. Her passion in the classroom stems from helping students find out what part of the medical field they enjoy and working to help them obtain an entry-level position, as the foundation for their future career in healthcare. Outside of work, Arje has 16-year-old twins, two German Shepherds, a dramatic calico cat, and a husband of 19 years, which keep her quite busy!
Dr. Lisa Faszold is an experienced educator and department leader with a strong background in elementary and special education, administration, curriculum development, and district-level committee work. Passionate about lifelong learning, she enjoys reading, traveling, and spending time with her family, all of which shape her approach to education. She holds a bachelor's degree in Elementary, Special, and Early Childhood Education from the University of Missouri - St. Louis, as well as master's degrees in Character Education and Administration from Lindenwood and Maryville University. In December 2024, she earned her doctorate in Educational Leadership from Maryville University, reinforcing her dedication to educational excellence.
Dr. April Hobbs has been a pharmacist for 15 years. She graduated with her PharmD from St. Louis College of Pharmacy, which is now UHSP, in 2010. April has worked at St. Louis Children's Hospital for the past 21 years. Over the course of her career, she has worked retail and outpatient, compounding, sterile compounding, medication reconciliation, chemotherapy,
and she has served as a supervisor in her current department for the past 8 years. She enjoys working closely with students and new technicians in training roles at SLCH, and she has completed five semesters at St. Charles Community College, where she is the instructor for the pharmacy technician program. In 2022, she also earned her MBA from Webster University. Outside of work, she has a husband and two dogs that she enjoys adventuring with. Her hobbies include traveling, spending time outdoors, and running.
